Quinoa and Black Bean Salad



Healthy meal numero uno: Quinoa+Black Beans!  Quinoa is a super healthy grain that comes from South America and is high in protein and fiber.  The grain is often used in diets to cut back on red meat.  Ding-dong, helllew.  I'm surprised Quinoa isn't a Super Food!  No prob - I'll pair it with Super black beans, finely diced tomato, celery and red onion.  Season it with a homemade low fat vinaigrette and a chiffonade of your preferred fresh green herb to top it all off....  this is a GREAT meal, healthy and satisfying.  I promise, eat a bowl and you won't miss any animal from your meal.

Quinoa and Black Bean Salad:
1 can black beans, drained and rinsed
1 cup of uncooked quinoa (cook according to package)
1 large tomato, seeded and diced
3 ribs of celery, diced
1/2 small red onion, finely diced
2 spoons of vinaigrette
garnish with fresh green herb (I used marjoram)
Toss everything together and dig in!

If you feel this is not a meal, but a side... THINK AGAIN!  THIS IS ALL YOU NEED - REMEMBER WE ARE GETTING HEALTHY!!!!!

Ok, if you still think this is a side - add a small, AND I MEAN SMALL PEOPLE, fillet of steamed fish.  Go for salmon, it's high in omega 3s.
