Seared Albacore with Kale and Quinoa
Albacore tuna... Mmmmmmm good! My dad and brother used to bring home albacore from their weekly fishing expeditions all summer long when I was a kid - it's definitely my favorite fish. I like it seared rare, so delicious and light. Tuna is a super healthy and we're going to pair it with a superfood... kale. I've never made kale, but's it's on the list and super healthy so it's time to get with the program. I'm loving my quinoa right now so I'll mix in a little quinoa with the kale and call it a day. Simple sauté for the kale, mix with quinoa, top with sauted tuna. Done.
Albacore with Kale and Quinoa
2 albacore fillets
1 cup quinoa - cooked according to the package
1 bunch kale - washed, dried and cut into 1-inch strips
1/2 onion - diced
1 clove garlic - minced
salt
pep
oil
slug of chicken broth
vinaigrette - homemade, 2 spoonfuls
Kale and Quinoa:
Set a non-stick pan over medium heat. Pop in the onion and saute until softened, add the garlic for a few minutes - don't let it brown. Add in your kale and deglaze with a little chicken broth. Let steam for a few minutes. Toss around. Put in a bowl and add your cooked quinoa - toss with a couple of spoonfuls of vinaigrette.
Albacore:
Set non-stick pan over high heat. Season your fish on both sides. Sear in pan for a couple of minutes on both side. Server over platter of Kale and Quinoa.
