Roast Albacore with Braised Fennel

Braised fennel and red onion are the perfect bed for roast fish. Braise in chicken stock and spritz with fresh lemon at the last minute and you've got the perfect saucy base for roast albacore. I top it with peppery arugula dressed with lemon, oil and capers. Yum. Light, healthy, delicious. Roast the fish on 400 for 5 minutes. Braise your fennel and onion for 15 minutes.
