Ok - so about those tomatoes. Tomatoes are full of lycopene which is and EXCELLENT antioxidant. The key to maximizing the health benefits of tomatoes and they lycopene within, includes cooking the tomatoes and serving them with a healthy fat to allow for maximum absorption. For my healthy SUPERFOOD meal with tomatoes I made quinoa with tomato and chick peas. Topped it off with grilled chicken and fresh basil.
