Salmon, Spinach, Black Bean and Roasted Red Pepper Salad

Grilled Salmon, Fresh Spinach, Black Beans, Roasted Red Peppers.

The SUPERFOOD journey continues.  I know I promised more on tomatoes and the health benefits of lycopene… but I didn’t get to my tomater recipe last night… tonight, I will work on it!  Last night Josh grilled some salmon on the BBQ and I made a simple, SUPERFOOD salad.  Black beans, healthy greens and tasty char-roasted red peppers deliver a tasty and hearty salad to go with our fish.  Spinach is extremely rich in antioxidants – especially when eaten raw.  Black beans are also high in antioxidants, full of protein and fiber.  Adding beans to the greens make the meal feel heartier – you bulk up the meal with high fiber goodness – and you won’t miss those nasty old carbs.

Eating healthy, SUPERFOOD meals are great and really easy to prepare.  You mainly just assemble your fresh ingredients – toss and serve.  Tonight, you get to fire up the grill, but you could substitute roasted or steamed salmon.  Easy peasy.  Here’s how to make it…

Grilled Salmon with Spinach, Black Beans and Roasted Red Pepper
2 Salmon Fillets, grilled
1 can Black Beans, drained and rinsed
1 bunch Spinach, chopped
2 Red Peppers, halved, roasted under the broiler until charred, then peeled and sliced
Couple of spoonfuls of homemade vinaigrette, easy on the oil

Salad:
Toss everything except the salmon – let sit for 5 minutes so the vinaigrette can absorb into the ingredients.  Top with your salmon and ENJOY!
