Pork Chops and Applesauce... Swell!

Get a thick, center cut chop. Brine in salt and sugar bath for 2 hours. Sear on both sides and finish in a 400 degree oven for 10 minutes. Delish! Serve with homemade applesauce. Or just sex-up your favorite jarred sauce with pumpkin pie spices and a fresh apple peeled and chopped. I also like to serve with braised fennel. Yum.
