Thanksgiving Enchiladas!


It's been a long time!  I'm back with a Thanksgiving leftovers recipe that I thought was pretty clever, and makes use of a lot of leftovers in one dish.  Turkey Enchiladas in Sweet Potato Sauce!  Shred your turkey, saute it with onions, add a little broth and a splash of cream (I usually would never use cream, but I had some leftover - and I hate waste!) or milk - you want is juicy but not soupy.  Thin out your whipped sweet potato with some turkey broth, a couple of spoons of leftover grave and another splash of cream or milk.  IF you like spicy food - you could add some chili pepper (my family doesn't like it spicy so I left it out.)  Then I rolled up corn tortillas with a spoonful of the shredded turkey, a little pile of shredded cheese (I used a mix of sharp cheddar and mozz.)  Roll up all your tortillas then cover them with the sauce and sprinkle with more cheese and bake until bubbly!  Sprinkle with any leftover herbs, I had thyme.  YUM.
