Spaghetti with Cauliflower

I haven't made my Costco run yet, so the fridge is STILL bare.  I do find that I have to be more creative when I'm down to my last few ingredients.  I happen to have a head of cauliflower on hand that was about a week old... better use it up!  I have a can of black beans, a can of tomatoes and a box of whole wheat spaghetti... guess I'll go with the spaghetti!  I'll blanch the cauliflower in salted water - then fry up some garlic and red pepper and toss in my blanched veg + the pasta, dust it with some Pecorino Romano and DONE!  Simple and satisfying.  Yesterday was a particularly gruelling gym session - so the carbs hit the spot.  Here's how to make what's for DINNER!



Spaghetti with Cauliflower
1/2 packet of whole wheat spaghetti
1 head of cauliflower - cut into florets
2 garlic cloves, minced
pinch red pepper flakes
salt
pep
oil

Pasta:
Blanch the florets in salted boiling water for about 5 minutes, until softened.  Boil your pasta according to the package and drain.  Heat a glug of oil over medium/high heat and saute your garlic and red pepper for a minute - drop in your cauliflower and swirl around.  Throw in your pasta and swirl it around some more, so that the pasta is coated with the veg, garlic and oil.  Serve in pasta bowls with a sprinkle of Pecorino Romano!  Enjoy!!!
