So this is my very first post. I'm very excited about this new adventure. I will cut straight to the chase... What's for DINNER?! Tonight: Roast Salmon with Braised Brussels Sprouts.
Roast Salmon with Braised Brussels Sprouts
2 Salmon Fillets
Balsamic Glaze (2 part balsamic, 1 part honey, 1 part country dijon)
10 Brussels Sprout, sliced thinly
1/4 Onion, sliced thinly
1 Garlic Clove (smash with the side of your knife and chop)
1 Slice Pancetta, small dice
Big splash of chicken stock
Salmon:
Pre-heat oven to 400 degrees. Coat fillets with glaze, sprinkle with salt and pepper and pop onto a baking sheet and into the oven for 8 minutes.
Brussels Sprouts:
Put a non-stick skillet over high heat. Douse pan with a slug of olive oil. Pop the diced pancetta into the pan and fry for a minute. Pop the sliced onion into the pan and swirl around until the onion starts to brown. Turn the heat down to medium, add the smashed garlic and swirl around so the garlic doesn't brown, cook for about a minute, add the sliced sprouts - sprinkle with salt and pepper. Saute the sprouts for a couple of minutes then douse with chicken stock and simmer for 5 minutes until all of the liquid is nearly evaporated.
